Gnocchi chicken soup recipe

This has become my favorite comfort soup to make, especially when I have leftovers of rotisserie chicken. It’s super easy, and super yummy.

Ingredients: 

  • ½ cup of butter
  • 1 quart of half & half
  • 32 oz of chicken stock
  • ½ cup of diced celery
  • Rotisserie chicken, chopped up, as much as you’d like
  • ½ onion, diced
  • 2 large carrots, peeled thin
  • 1 big handful of baby spinach
  • 1/3 cup of flour
  • Thyme
  • Parsley
  • Onion powder
  • Garlic salt
  • Any other spices/herbs you want
  • Salt & pepper
  • Gnocchi 

 

Directions: 

  1. Sauté the onions and celery with butter. Once they’re translucent, add the garlic
  2. Add the flour to the veggies and mix it in. Keep on low heat and stir frequently to not burn
  3. Add the half & half and chicken stock once thickened (happens quickly)
  4. Mix it around
  5. Add everything else and simmer for about 20-30 minutes
  6. Once done, add the gnocchi into the soup to cook (usually takes about 3 minutes, but follow the directions on your package).
  7. And that’s it! Serve and enjoy!

Make sure to store the soup in the fridge so it doesn't go bad (I made that mistake :I )
